Bulalo, which varies between a soup and a hearty stew, is one of the Philippines’ most well-known foods. Although Bulalo is famous for its thick broth and succulent, fall-off-the-bones beef, the bone marrows are the component that people fight over the most. It has a few ingredients. The stew’s richness derives primarily from the beef shanks and bone marrow; only a few herbs and vegetables are used to balance the flavour. It simmered the beef shanks and bone marrow for hours to allow most fat and collagen to dissolve and blend into the stock. Various vegetables, like cabbage, potatoes, onions, leeks, and occasionally corn cobs, are frequently included in Bulalo. This traditional Filipino beef soup is a year-round favourite but is incredibly delicious during the rainy season.
It is native to the Philippines’ Southern Luzon region. It is one of the most famous meals in Batangas and Cavite, particularly in Tagaytay, a tourist destination famed for its all-year-round cold weather and stunning views of the Taal Volcano. This soup is high in fat and oil from leg bones, that is why we should also be responsible for eating it. Previously, Batanguenos referred to bulalo as “ulalo,” which meant “pagkaing pambata” or “young food.” But also, because Bulalo is such a classic dish, Filipinos have created numerous versions, making this basic and already extraordinary food even more fascinating!
Bulalo is, without a doubt, the ultimate comfort dish. It tastes delicious and instantly warms you up. That is why, despite the extensive preparation, it is still one of the most popular soup recipes in the Philippines. Unsurprisingly, many restaurants, or Bulalohans, have made Bulalo their signature dish, each having several variations. It’s a beautiful, unforgettable lunch with a steaming cup of rice to pour your soup over! Many Filipinos are unaware that “Bulalo” has the same effect as chicken soup in relieving coughs and colds. Furthermore, boiling the bones for a few hours extracts vital minerals to support bone, heart, and muscle health.
